- 3 Tbsp. butter
- 3 c. onions julienned Salt to taste Cayenne to taste Freshly-grnd black pepper to taste
- 1/2 lb assorted exotic mushrooms, such as shiitakes, chanterelles, oysters, etc. wiped clean, and julienned
- 1 Tbsp. minced garlic
- 5 lrg Large eggs
- 2 c. heavy cream
- 1 dsh warm pepper sauce
- 1 dsh Worcestershire sauce
- 8 slc white bread crusts removed, cut into 1" cubes - (abt 4 c.)
- 1/2 c. grated Parmigiano-Reggiano cheese Parsley for garnish

- Preheat the oven to 350 degrees. Grease a 2 qt glass rectangular pan with 1 Tbsp. of the butter.
- Heat the remaining 2 Tbsp. butter in a large saute/fry pan over medium-high heat. Add in the onions. Season with salt, cayenne and black pepper. Cook, stirring, till the onions are soft, about 4 min. Add in the mushrooms and cook, stirring, till they are slightly soft, about 3 min. Add in the garlic and saute/fry for 1 minute. Remove from the heat and cold.
- In a large mixing bowl, whisk the Large eggs till smooth. Add in the cream. Season with salt, cayenne, pepper, warm pepper sauce, and Worcestershire sauce. Whisk the mix till blended. Add in the onion-mushroom mix and bread crumbs and mix well.
- Pour the mix into the prepared pan. Sprinkle the top with the cheese. Bake till the pudding is golden and bubbly, about 55 min. Remove from the oven and allow to cold for 5 min before serving.
- This recipe yields 10 servings.
