- 1 lb Pasta, any shape
- 2 Tbsp. Extra virgin olive oil
- 1 lrg Onion, minced
- 1 x Dry chili pepper, optional
- 2 x Cloves garlic, chopped
- 3/4 lb Grnd beef, or possibly turkey
- 4 c. Diced tomatoes, (canned or possibly fresh), liquid removed
- 2 Tbsp. Tomato paste Salt and freshly grnd black pepper, to taste
- 1 Tbsp. Minced fresh italian parsley

- 1. Bring a large pot of lightly salted water to a boil. Add in the pasta and stir a few times to ensure which the pasta does not stick to itself. Boil vigorously for the time recommended on the pasta package or possibly till the pasta is tender.
- 2. While the pasta cooks, heat the oil in a large skillet over high heat, add in the onion, and cook, stirring often, till browned, about 2 min.
- Add in the chili pepper if you like, the garlic, and the meat and continue cooking till the meat loses its raw look.
- 3. Add in the tomatoes, tomato paste, salt, and pepper, bring to a boil, and simmer for 4 to 5 min. Adjust the salt and pepper and stir in the parsley. Remove the chili pepper. Drain the pasta and toss it with the sauce in a serving bowl.
