Ingredients: Chili Hollandaise, (recipe follows); 1 lb Chorizo sausage; 6 x Large eggs Fresh cilantro sprigs Grated cheese Tortilla baskets; 2 tsp Grnd chili pwdr; 1 Tbsp. Warm water; 1/2 tsp Grnd cumin; 2 tsp Lemon juice; 1 x Egg yolk; 1/2 c. Butter, melted

Ингредиенты

Chili Hollandaise, (recipe follows)
1 lb Chorizo sausage
6 x Large eggs Fresh cilantro sprigs Grated cheese Tortilla baskets
2 tsp Grnd chili pwdr
1 Tbsp. Warm water
1/2 tsp Grnd cumin
2 tsp Lemon juice
1 x Egg yolk
1/2 c. Butter, melted

Инструкции

For Chili Hollandaise: In a blender container, combine chili pwdr, water, cumin, lemon juice and egg yolk. Blend till smooth. With blender on high, pour in 1/2 c. of warm butter in a thin and steady stream.
Keep tortilla baskets hot in a 150 F oven.
Crumble chorizo into a frying pan. Cook till brown. Drain and keep hot.
Scramble Large eggs.
Place each tortilla basket on a plate. Spoon in sausage, Large eggs and hollandaise. Garnish with cilantro and cheese. Buen provecho!
