- Mix batter in order given. Add in egg plant and stir well. Drop one tsp. of the egg plant batter in warm deep oil. Cook till brown. First soak the egg plant in salt water for 1 hour and then pour the water off. Add in fresh water and cook till tender. Pour off water. Add in the egg plant to the batter.
