What? Another pinto bean recipe?
The other day I didn't want to go to the store, so I made do with what I had on hand. Yum!
Ингредиенты
- 1 lb. dry pintos
- 4 oz (1/2 cup) tomato sauce
- 1/2 small onion, chopped
- 2 tbs. chopped bell pepper
- 1 tsp. garlic powder
- 1/2 tsp. cumin powder
- 2 cups chicken stock
- oil
- salt and pepper to taste
- tbs. chopped cilantro
- optional: chopped jalapeno
Инструкции
- Quick Soak Method: Bring beans to boil for 1 minute in 2 qts. water.
- Turn off heat, cover, let sit an hour or more.
- Drain.
- Saute the chopped onion and bell pepper in some oil until lightly browned.
- Add everything to a pot, simmer, covered for about an hour and a half.
- If it needs more liquid, add more stock.
- Will freeze.
