.%3C/p%3E%3Cp%3EUsing%20a%20pin%20or%20tip%20of%20a%20corkscrew,%20carefully%20poke%20a%20small%20hole%20in%20the%20base%20(larger%20end)%20of%20the%20egg.%3C/p%3E%3Cp%3EThen%20carefully%20peel%20away%20about%20a%201/2%20inch%20to%203/4%20inch%20circle%20of%20the%20shell%20and%20thin%20film%20below%20the%20shell.%20%20Turn%20the%20egg%20over%20a%20bowl%20and%20remove%20the%20entire%20egg%20from%20the%20shell.%20%20To%20remove%20the%20remaining%20egg%20I%20used%20a%20round%20popsicle%20stick%20to%20carefully%20help%20scoop%20out%20the%20contents.%20%20Do%20this%20same%20thing%20with%20the%20rest%20of%20the%20eggs.%3C/p%3E%3Cp%3EAt%20this%20point%20rinse%20the%20insides%20of%20the%20eggs%20carefully%20with%20a%20slow%20steady%20stream%20of%20water%20over%20the%20sink.%20%20%20Then%20place%20the%20rinsed%20eggs%20into%20a%20bowl%20of%20salt%20water.%20%20I%20used%20about%201/4%20cup%20of%20Kosher%20salt%20and%20then%20enough%20water%20to%20cover%20the%20eggs.%20%20Be%20careful%20when%20submerging%20the%20eggs%20into%20the%20water%20so%20the%20shells%20don't%20break.%20%20Leave%20them%20to%20soak%20for%2030%20minutes.%3C/p%3E%3Cp%3ERinse%20the%20eggs%20and%20lay%20on%20a%20paper%20towel%20to%20drain%20with%20the%20holes%20setting%20directly%20on%20the%20towel%20to%20dry%20out.%3C/p%3E%3Cp%3EDirections%20for%20making%20the%20cake%20batter:%3C/p%3E%3Cp%3EIn%20a%20small%20bowl%20mix%20the%20flour,%20baking%20powder,%20baking%20soda,%20and%20salt.%20%20Set%20aside.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20mix%20one%20egg%20and%20the%20sugar%20until%20blended%20and%20smooth.%3C/p%3E%3Cp%3EAdd%20the%20butter%20and%20lemon%20extract%20and%20mix%20until%20thoroughly%20combined.%3C/p%3E%3Cp%3EAdd%20the%20plain%20yogurt%20and%20blend%20until%20smooth.%3C/p%3E%3Cp%3EUsing%20some%20non-stick%20spray%20carefully%20place%20the%20nozzle%20into%20the%20hole%20of%20each%20egg%20and%20spray.%20%20Carefully%20swirl%20the%20egg%20around%20so%20that%20the%20non-stick%20contents%20cover%20the%20insides%20of%20the%20egg.%3C/p%3E%3Cp%3ESet%20a%20popover%20pan%20(which%20I%20used)%20or%20cupcake%20pan%20(which%20would%20need%20a%20base%20of%20aluminum%20foil%20set%20into%20each%20cup%20to%20help%20the%20eggs%20stand%20upright)%20in%20front%20of%20you%20on%20the%20counter.%3C/p%3E%3Cp%3EPlace%20the%20cake%20batter%20into%20a%20pastry%20bag%20fitted%20with%20a%20large%20round%20tip%20or%20you%20can%20use%20a%20plastic%20baggie.%20%20Make%20sure%20that%20the%20tip%20will%20fit%20into%20the%20hole%20of%20the%20egg.%20%20Gently%20fill%20each%20egg%20approximately%203/4%20full.%20%20If%20you%20don't%20fill%20enough%20your%20cake%20won't%20look%20like%20an%20egg.%20%20I%20filled%20all%20of%20mine%203/4%20-7/8%20full.%20Remember%20the%20batter%20will%20expand.%20%20If%20some%20of%20the%20batter%20spills%20out%20of%20the%20egg,%20don't%20worry%20you%20can%20easily%20clean%20it%20up%20and%20nibble%20on%20the%20scraps.%20%20You%20can%20then%20clean%20the%20egg%20with%20a%20damp%20paper%20towel.%3C/p%3E%3Cp%3EBake%20the%20eggs%20in%20the%20pan%20at%20350F%20for%20about%2023-25%20minutes.%3C/p%3E%3Cp%3ELet%20cool%20completely%20before%20peeling%20the%20eggs.%20%20However,%20if%20you%20prefer%20you%20can%20also%20serve%20them%20directly%20in%20the%20shell%20and%20let%20your%20guests%20peel%20their%20own.%3C/p%3E%3Cp%3EThese%20are%20great%20served%20with%20lemon%20curd.%20As%20I%20mentioned,%20I%20had%20fully%20intended%20to%20stuff%20these%20with%20the%20lemon%20curd%20but%20they%20came%20out%20so%20light%20and%20fluffy%20that%20I%20was%20afraid%20I%20would%20ruin%20the%20cake%20eggs%20so%20didn't%20bother.%3C/p%3E%3Cp%3EThese%20are%20fun%20to%20make%20and%20I%20am%20sure%20your%20kids%20will%20enjoy%20it%20as%20well.%20%20Just%20make%20sure%20they%20handle%20the%20eggs%20very%20carefully%20so%20they%20don't%20break%20them.%3C/p%3E%3Cp%3EHave%20fun%20making%20these%20and%20have%20a%20very%20Happy%20Easter!%3C/p%3E){kind=link}
