  1. Peel, seed and dice pears.
  2. In a large saucepan, simmer apricots, water, pears and lemon juice 20 min. Add in sugar. Stir till sugar dissolves. Increase heat; boil rapidly for 15 min or possibly till jam reaches 105C. Remove from heat. Stir in brandy. Remove scum and let stand for 5 min.
  3. Stir well and ladle into warm jars and seal.
  4. Makes 2.5 litres.
  5. Keeps for 3-4 months.
  6. Ensure storage jars are well sterilised.
