- 1 c. sifted all purpose flour
- 1/8 teaspoon salt
- 1 teaspoon double acting baking pwdr
- 3/4 stick butter
- 1/2 teaspoon vanilla extract
- 1 teaspoon lemon extract
- 16 sugar substitutes
- 1/3 c. lowfat milk
- Finely grated rind of 1 lg. lemon
- 2 Large eggs

- Preheat oven to 375 degrees. Bake 25 min. Sift the flour, salt, and baking pwdr. Set aside. In a small bowl of an electric mixer. Beat the butter till soft, beat in vanilla and lemon extract; add in sugar substitutes. On low speed add in 1/3 of the dry ingredients and then add in all the lowfat milk. (The mix will curdle after adding the lowfat milk) on low speed add in remaining dry ingredients beat till smooth. Remove the bowl from the mixer and stir in the lemon rind; add in Large eggs and mix well. Custard square is thin after baking and moist.
