%3C/p%3E%3Cp%3EI%20set%20lunch%20dates%20with%20The%20Hubs,%20with%20peers%20from%20other%20school%20districts%20(who%20are%20also%20enjoying%20the%20limited%20time%20off),%20and%20friends%20and%20family%20who%20often%20get%20ignored%20when%20things%20get%20busy%20again%20in%20the%20fall.%20%20%20It%20is%20so%20nice%20to%20dine%20%20at%20a%20popular%20lunch%20spot%20on%20the%20patio%20and%20not%20in%20the%20cafeteria%20with%20teenagers.%3C/p%3E%3Cp%3EJust%20sayin%E2%80%99.%3C/p%3E%3Cp%3ERecently,%20my%20best%20friend%20and%20I%20had%20a%20great%20lunch%20at%20Cosmo%20in%20Tulsa%20where%20I%20had%20a%20delicious%20curried%20chicken%20salad.%20It%20was%20so%20good%20I%20wanted%20to%20have%20it%20again%20and%20again%20so%20I%20rushed%20home%20and%20try%20to%20replicate%20it.%20%20%20I%20think%20I%20got%20pretty%20close.%20%20What%20surprised%20me%20the%20most%20is%20The%20Hubs%20loved%20this%20salad%20too.%3C/p%3E%3Cp%3ECurried%20Chicken%20Salad%20with%20Cucumbers%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20degrees%20F.%3C/p%3E%3Cp%3EPlace%20the%20chicken%20breasts%20on%20a%20foil-lined%20sheet%20pan%20and%20rub%20the%20skin%20with%20olive%20oil.%20Sprinkle%20liberally%20with%20salt%20and%20pepper.%20Roast%20for%2035%20to%2040%20minutes,%20until%20the%20chicken%20is%20just%20cooked.%20Set%20aside%20until%20cool%20enough%20to%20handle.%20Remove%20the%20meat%20from%20the%20bones,%20discard%20the%20skin,%20and%20dice%20or%20shred%20the%20chicken%20(to%20your%20liking).%3C/p%3E%3Cp%3EFor%20the%20dressing,%20combine%20the%20mayonnaise,%20sour%20cream,%20wine,%20curry%20powder,%20and%201%20t.%20salt%20in%20a%20blender.%20%20Process%20until%20smooth.%3C/p%3E%3Cp%3ECombine%20the%20chicken%20with%20enough%20dressing%20to%20moisten%20well.%20Add%20the%20cucumbers%20and%20onions%20and%20mix%20well.%20Refrigerate%20for%20a%20few%20hours%20to%20allow%20the%20flavors%20to%20blend.%3C/p%3E%3Cp%3EServe%20in%20a%20sandwich%20form%20or%20on%20top%20of%20arugula%20or%20other%20spicy%20greens%20with%20a%20drizzle%20of%20balsamic.%3C/p%3E%3Cp%3EI%20love%20that%20Ina%E2%80%99s%20original%20recipe%20directed%20to%20roast%20the%20chicken.%20%20This%20is%20how%20I%20will%20prepare%20chicken%20for%20salad%20from%20now%20on.%20%20%20I%20have%20a%20plethora%20of%20cucumbers,%20but%20you%20could%20obviously%20sub%20in%20celery,%20sweet%20peppers%20(which%20I%20almost%20did%20as%20well),%20or%20other%20veggies.%3C/p%3E%3Cp%3EAs%20July%20comes%20to%20a%20close,%20I%20need%20to%20plan%20some%20more%20lunch%20dates%E2%80%A6%E2%80%A6%E2%80%A6.%20%20(Anybody%20in?)%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
