- Mix the vodka, simple syrup, cucumber and lemon in a container. Place in the freezer for at least one hour. The longer it sits the better the flavor.
- Pour about half the mix equally between two cocktails glasses with ice.
- Top with club soda.
- To make mint simple syrup place equal parts sugar and water In a saucepan. Bring the mixture to a simmer and remove from heat. Add as much or as little mint as you wish. Steep until the flavor you desire has been reached. Anywhere from 10 to 30 minutes.
