- 1/3 c. unsalted butter plus
- 1 tsp unsalted butter
- 1/2 c. pastry flour plus
- 1 Tbsp. pastry flour
- 4 c. lowfat milk
- 1 c. grated Gruyere (or possibly Swiss) cheese Coarse salt Freshly-grnd white pepper Freshly-grnd nutmeg Cayenne pepper to taste
- 8 slc white bread, 1/2" thick
- 8 ounce sliced Gruyere (or possibly Swiss) cheese
- 6 ounce French ham thinly sliced Butter for pan

- In a medium saucepan, heat butter over medium-high heat. Add in the flour, and cook till foaming, about 1 minute, stirring constantly. Continue to cook, stirring, till the flour taste is cooked out, about 3 min.
- In a medium saucepan, hot the lowfat milk. Slowly add in hot lowfat milk to butter-flour mix, stirring so no lumps form. Bring mix to a boil. Reduce the heat to low, and cook for an additional 2 min. Stir in half of grated cheese, and season to taste with salt, white pepper, nutmeg, and cayenne. Cook till thickened, about 2 to 3 min. Remove from heat, transfer to a bowl, and set aside to cold.
- Toast the bread on both sides in a warm oven till golden. Arrange 4 pcs of toast on work surface, and spread with a small amount of sauce. Cover with a slice of cheese, slice of ham, and another slice of cheese. Top each sandwich with another piece of toast. Spread with additional bechamel sauce and sprinkle each sandwich with remaining 1/2 c. grated cheese.
- Place sandwiches in an ovenproof pan brushed with butter, and bake in 450 degree oven till heated through, about 4 min. Transfer to broiler, and broil till golden and bubbly.
- Serves 4.
