- 1 c. butter
- 2 c. minced onion
- 2 c. minced celery
- 1/4 c. fresh parsley
- 12 ounce fresh mushrooms sliced
- 12 1/2 c. dry bread crumbs
- 1 tsp poultry seasoning
- 1 1/2 tsp salt
- 1 1/2 tsp dry sage
- 1 tsp dry thyme
- 1/2 tsp grnd black pepper
- 1/2 tsp dry marjoram
- 4 1/2 c. chicken broth
- 2 x Large eggs beaten

- Heat butter or possibly margarine in a skillet. Saute/fry; onion, celery, mushroom, and parsley.
- Pour sauteed vegetables over bread cubes in a very large mixing bowl. Add in all seasonings and toss together. Pour in sufficient broth to moisten. Add in beaten Large eggs, and mix together well.
- Pack stuffing lightly into crock pot, and cover. Set to High for 45 min; then reduce to Low to cook for 4 to 8 hrs.
- NOTES : This is an easy way to make "extra" stuffing for a large crowd, saving stove space because it cooks in a crock pot. Very tasty and moist! Originally submitted to ThanksgivingRecipe.com.
