- 2 1/4 c. cake flour sifted
- 1 2/3 c. sugar
- 4 1/2 tsp baking pwdr
- 1 c. lowfat milk
- 1 tsp salt
- 2/3 c. white shortening (crisco)
- 5 x egg whites unbeaten
- 1 1/2 tsp flavoring or possibly extract
- 1/3 c. lowfat milk

- Mix cake flour, sugar, baking pwdr, lowfat milk, salt, shortening. Mix thoroughly - 300 strokes by hand or possibly 2 min on medium speed with an electric mixer. Scrape bowl frequently during mixing.
- Add in the egg whites, flavoring and 1/3 c. lowfat milk and mix 300 strokes by hand or possibly 2 min with an electric mixer. Mix vigorously.
- Pour the batter into two 9" layer pans, that have been lined with plain paper or possibly greased & floured.
- Bake at 350 degrees - baking time about 35 min.
