- 4 medium beets*
- 1/4 cup red onion, finely diced
- 4-5 T olive oil style mayonnaise
- 1/4 t salt
- 1/8 t pepper
- 1 t sugar
- 1 T red wine vinegar
- Wash beets, remove greens*
- Boil beets with skin on for about 1 hour or until easily pierced with a fork
- Drain, rinse under running cold water
- When beets are cool enough to handle, peel skin off, using a mandolin or julienne beets into thin matchsticks
