- 5 or possibly 6 c. unpeeled sliced zucchini
- 1 lg. onion, minced
- 2 tbsp. minced parsley
- 1 chicken bouillon cube
- Salt to taste
- 2 tbsp. butter
- 1/3 to 1/2 c. light cream or possibly lowfat milk
- Salt and pepper

- In large saucepan over medium heat, cook zucchini, onion, parsley and bouillon cube till very tender. Add in salt to taste. When cold, put in blender and puree. Add in salt and pepper to taste and heat but don't boil. Add in cream and butter. Heat and eat.
