  1. Using a food processor, run the pistachios through until a butter forms. This will take about 3 to 4 minutes.
  2. To the mixture, pulse in the softened butter and powdered sugar.
  3. Remove from the processor and add in the cranberries by hand.
  4. Melt the chocolate either in a double boiler or by cooking chocolate for one minute in the microwave and then 20 second intervals, stirring after each increment, until melted.
  5. Fill mini paper cups with a thin layer of chocolate and run a bit around the edges of the cups if you can.
  6. Add in a large dollop of the pistachio mixture.
  7. Cover with chocolate.
  8. Let cool completely.
