- 3 c. (1 1/2 LBS) Eggplant, peeled and cubed
- 1/3 c. Minced green pepper
- 1 med Onion, minced
- 2 x Cloves, garlic, crushed
- 1/3 c. Oil
- 1 sm Can tomato paste
- 1 can (4oz) mushrooms, liquid removed and minced
- 1/4 c. Water
- 2 Tbsp. Wine vinegar
- 1/2 c. Sliced stuffed olives
- 2 Tbsp. Sugar
- 1/2 Tbsp. Oregano

- Combine eggplant, green pepper, onion and garlic in oil. Cover and cook over low heat for 30 minutes. ; stir occasionally Add in rest of ingredients; simmer 30 minutes. until tender. Chill, covered. Serve with pita pcs or possibly party rye.
