- 10 ounce flavored linguine - (to 12)
- 1 jar roasted red peppers - (12 ounce) with liquid
- 1 jar marinated artichokes - (6 ounce) with liquid
- 1/4 c. rehydrated or possibly oil-cured sun-dry tomatoes
- 1/2 c. parsley leaves
- 2 med carrots thinly sliced
- 2 med hard ripe tomatoes diced
- 2 Tbsp. white wine vinegar (or possibly white balsamic vinegar) Salt to taste Freshly-grnd black pepper to taste

- Bring a large pot of water to a boil. Add in the linguine and cook at a rapid simmer till al dente, about 8 min. Drain the linguine and rinse under cool water till cold.
- In the meantime, combine the red peppers and artichokes, their liquids, the sun-dry tomatoes, and parsley in a food processor. Pulse on an off till the mix is coarsely and proportionately minced.
- In a serving bowl, combine the red pepper and artichoke mix with the linguine in a serving container and toss. Add in the carrots, tomatoes, and vinegar. Season to taste with salt and pepper and toss again.
- This recipe yields 4 to 6 servings.
