- 1 lb large shrimp in the shell
- 6 x garlic cloves chopped
- 1/3 c. lemon juice
- 1/3 c. extra virgin olive oil
- 2 Tbsp. minced fresh oregano or possibly parsley
- 1 tsp grated lemon zest Salt to taste Freshly-grnd black pepper to taste

- Bring a large pot of water to a boil. Add in healthy pinch of salt and the shrimp, and cook about 2 min, till orange-pink. Drain and set aside to cold. When cold sufficient to handle, remove shells and cut shrimp in half lengthwise, removing vein.
- Whisk together garlic, lemon juice, extra virgin olive oil, oregano, and lemon zest in a large bowl. Add in shrimp, salt, and pepper, and toss to combine. Refrigerateand serve.
- This recipe yields 6 servings.
