- 1/2 c. Cocoa
- 1 1/4 c. Sugar
- 1/3 c. Cornstarch
- 1/4 tsp Salt
- 3 c. Lowfat milk
- 3 Tbsp. Butter or possibly margarine
- 1 1/2 tsp Vanilla extract
- 1 x Pie crust, baked, cooled

- In medium saucepan, stir together cocoa, sugar, cornstarch and salt. Gradually add in lowfat milk, stirring till smooth. Cook over medium heat, stirring constantly, till mix comes to a boil; boil 1 minute. Remove from heat; stir in butter and vanilla. Pour into prepared crust. Press plastic wrap directly onto surface. Cold to room temperature. Chill 6 to 8 hrs. Garnish as desired. Cover; refrigerator leftover pie.
- Yield: 6 to 8 servings
