- 1 1/2 lb Grnd beef
- 1/4 lb Fresh mushrooms, minced
- 1 med onion, minced
- 1/4 c. Chopped parsley
- 3/4 c. Dry bread crumbs
- 1 x Egg
- 1 1/4 tsp Salt
- 1/4 tsp Pepper
- 3/4 c. Lowfat milk
- 1/2 lb Cheddar cheese

- Blend meat with minced mushrooms, onion, parsley, bread crumbs, egg, salt, pepper and lowfat milk till well blended. Dice cheese into 1/2" cubes. Blend into meat mix (by hand), making sure to distribute the cheese chunks proportionately.
- Pack into a 9x5x3" loaf pan. Bake at 350F for 1 to 1 1/4 hrs. Pour off liquid. Cold slightly before cutting. If you like serve with the following:
- Mustard sauce: Scald 3/4 c. half-and-half. Add in 1/4 c. sguar. Gradually add in 1/4 c. cool half and half to a mix of 2 Tablespoons dry mustard, 1 Tablespoons flour and 1/4 tsp salt. Add in to warm cream; cook till thickened. Stir a little of mix into 1 egg yolk; put back into pan and cook, stirring 2 min.
- Stir in 1/2 c. warm water. Good served with: Scalloped potatoes, a green vegetable and a fruit dessert. For a buffet, serve at room temperature with cheese, dark breads, a salad and a hearty red wine, if desired.
