Name: Chocolate Oatmeal Pie
Ingredients: 2 x Large eggs; 1 c. white sugar; 1/4 tsp salt; 1 c. light corn syrup; 2 Tbsp. butter or possibly margarine, melted; 1 tsp vanilla extract; 1/2 c. flaked coconut; 1/2 c. quick cooking oats; 1/2 c. semisweet chocolate chips; 1 x 9 inch unbaked pastry shell

2 x Large eggs
1 c. white sugar
1/4 tsp salt
1 c. light corn syrup
2 Tbsp. butter or possibly margarine, melted
1 tsp vanilla extract
1/2 c. flaked coconut
1/2 c. quick cooking oats
1/2 c. semisweet chocolate chips
1 x 9 inch unbaked pastry shell

Method:1. Preheat oven to 350 degrees F (175 degrees C).
2. Beat Large eggs till thick and lemon colored (about 3 min). Continue beating while adding sugar, salt, corn syrup, butter or possibly margarine, and vanilla. Stir in coconut, oats, and chocolate. Pour filling into pie shell.
3. Bake for 50 to 55 min. Cold completely before serving.
Makes 1 - 9 inch pie
