- 1 T oil

- 1 t
- vanilla extract
- 1 t
- almond extract
- 2 T creme de cocoa, optional
- 1/2 c
- chocolate chips
- 1/2 c
- dried cranberries
- Cooking Directions
- Preheat oven to 350
- Combine the flour, sugar, baking powder, salt, cinnamon and cocoa.
- Whisk together butter, oil, eggs, egg yolk, vanilla extract, almond extract, and creme de cocoa, if using.
- Add flour mixture to creamed mixture Stir until blended
- Add chocolate chips and dried cranberries Stir together until combined.
- Turn dough out onto a lightly floured surface, knead 8-12 times.
- Divide dough in half. Shape each portion into a 8 inch long roll
- Place rolls, 6 inches apart, onto a baking sheet lined with parchment paper
- Flatten dough to a 1 inch thickness.
- Bake at 350 for 30-35 mins
- Remove rolls to a wire rack. Cool 10 mins
- Using a serrated knife, cut logs into 3/4 inch slices
- Place slices on baking sheet lined with parchment paper
- Bake at 350 for 8-10 mins
- Turn slices over and bake an additional 8-10 mins
- Remove from baking sheet, cool on wire rack
