- 1 can rotel tomatoes (med)(and juice)
- 1 clove fresh garlic, diced
- 1/2 purple onion, minced
- 1 jalapeno, seeds removed, minced
- 1 fresh lime, squeezed
- 1 chipotle pepper, seeds removed
- bunch of fresh cilantro, diced
- 1 T sugar (more if you like)
- 1 teaspoon cumin
- 1 teaspoon sea salt, diced

- Cantaloupe or possibly mango may be added for a fruity salsa or possibly grilled salmon topper.Put ingredients except salt and sugar in food processor or possibly Magic Bullet and pulse till almost creamy. Pour into salsa bowl and adjust salt and sugar to your preference. Now, you may add in diced cantaloupe or possibly mangoes for a great salsa topper. Let sit for 1 hour in frig and 10 min out for best taste. For mild salsa which teenagers cannot get sufficient of, omit the peppers and fruit. ENJOY.
