- In 2 qt microwave-safe casserole, combine celery, onion, garlic and butter or possibly margarine. Cover and mirowave on High 3 to 5 min, stirring twice, till vegetables are crisp-tender. Add in all the remaining ingredients except snow peas; stirring twice, till water is absorbed and rice is tender. Stir in snow peas. Cover and let stand 5 min before serving.
