- 2 Tbsp. extra virgin olive oil
- 2 Tbsp. balsamic vinegar
- 1 tsp salt
- 1/2 tsp freshly-grnd black pepper
- 1/2 tsp dry crumble rosemary
- 1/2 pkt sugar substitute
- 1 whl chicken - (abt 3 1/2 lbs) cut 8 pcs
- 1 c. small cauliflower florets
- 1 c. small broccoli florets
- 1 sm red pepper cut in 2 pcs

- Heat oven to 400 degrees. In a large bowl, combine extra virgin olive oil, vinegar, salt, pepper, rosemary, and sugar substitute. Add in chicken and vegetables. Toss till well coated.
- Arrange chicken, skin-side up in a jelly roll pan. Place vegetables, in a single layer, around chicken. Roast 40 min, till chicken is cooked through and browned. Halfway through cooking time, flip vegetables over with a spatula.
- This recipe yields 4 servings.
