2-3 boneless, skinless chicken breasts cut into small 1 pkg (16 oz) cut leaf ½ red onion sliced & chunked chopped teaspoon 8-ounce package cottage 1 cup Cheddar & Pepper Jack shredded About 1 dozen large garlic croutons, Cheese for oven to 350F.  In a large frying pan the oil.  Add chicken and onions.  Cook until chicken is lightly brown onions are softened.  Add spinach cook until wilted (5-8 minutes).  cottage cheese and cheese.  Pour into qt. casserole dish and bake 25-30 minutes or until bubbly and cheese melted.  Sprinkle with crushed and sprinkle with enough cheese to very lightly cover croutons.  Bake another 5 minutes or until cheese…
