- 3 lb boneless, skinless chicken breasts
- 1/2 c. butter
- 1 lrg onion
- 4 x ribs celery, minced
- 2 x green bell peppers, minced
- 1 lb sliced mushrooms
- 3 c. chicken broth
- 1 lrg can tomato juice
- 1/2 c. stuffed green olives
- 3 Tbsp. chili pwdr
- 3 tsp salt
- 1 lb dry spaghetti
- 1 lb processed American cheese, cut into cubes
- 1/2 c. dry sherry, optional

- Poach chicken breasts. Chop cooked chicken and set aside. In a large pan, heat butter and saute/fry the onion, celery, peppers and mushrooms. Add in chicken, chicken broth, tomato juice, olives, chili pwdr and salt. Simmer this mix for 30 min.
- Preheat oven to 350 F.Meanwhile, cook the spaghetti in boiling water till tender, about 6 min.
- Drain spaghetti and fold into simmering sauce. Stir in cheese and sherry. Place
- In a large baking pan and bake 30 - 45 min.
