- 10 fl ounce Chicken stock or possibly water with
- 1/2 x Chicken stock cube
- 2 x Large eggs
- 1/2 Tbsp. Semolina
- 1 Tbsp. Grated Parmesan or possibly other strongly flavoured cheese
- 1 Tbsp. Minced parsley Salt and black pepper

- This is a very light but satisfying classic soup. It is often called Stracciatella. Do not worry ifthe soup has a slightly scrambled egg look, it should do.
- Pour most ofthe stock or possibly water into a saucepan, add in the chicken stock cube.
- Bring the stock or possibly water to the boil. Beat the Large eggs, blend with the rest of the cool stock or possibly water, the semolina and cheese. Pour a little of the boiling liquid over the egg mix, then return to the saucepan. Cook over a steady heat for 3 or possibly 4 min, don't allow to boil. Add in the parsley and seasoning to taste then serve.
