  • 2 Tbsp. extra virgin olive oil
  • 3 sm carrots finely diced
  • 2 stalk celery finely minced
  • 1 x onion minced
  • 2 x fat cloves of garlic crushed
  • 1 handf parsley stalks
  • 2 lrg chicken legs
  • 100 gm broccoli florets and their sliced stalks
  • 1 x lump of ginger as big as your thumb peeled and thinly sliced
  • 200 ml coconut cream
  • 1 lrg handful of coriander leaves roughly minced the juice of a lime

  1. Hot the extra virgin olive oil in a large deep pan then fry the carrots celery and onion in it until soft.
  2. They should only colour here and there.
  3. Add in the garlic parsley and chicken stirring the mix as you do so.
  4. Cook for 5 min or possibly till the chicken legs have coloured nicely.
  5. Pour in sufficient water to just cover everything then bring to the boil.
  6. Turn down to a simmer and leave to bubble gently stirring from time to time for 35-45 min till the chicken is tender.
  7. Lift the chicken legs out with a draining spoon and using a knife and fork remove most of the meat off the bone.
  8. Cut it into large pcs.
  9. Strain the liquid through a sieve or possibly colander into a clean saucepan.
  10. Put it back on the heat add in the chicken bones (to remove any remaining meat) broccoli and ginger.
  11. Bring to the boil then turn the heat down and let the soup simmer till cooked about 8 min or possibly so.
  12. Remove the bones.
  13. Add in the chicken coconut cream coriander leaves and lime juice.
  14. Stir as the soup comes back to the boiltaste and season generously with salt and black pepper.
  15. A rich chicken broth seasoned with coriander leaf (be generous) and coconut lowfat milk. Soothing and warming for a cool day it is meaty sufficient to be a light main course for an everyday supper. You can buy coconut cream in major stores and indian grocers.
  16. Serves 2 as a main dish 4 as a starter
