- Hot the extra virgin olive oil in a large deep pan then fry the carrots celery and onion in it until soft.
- They should only colour here and there.
- Add in the garlic parsley and chicken stirring the mix as you do so.
- Cook for 5 min or possibly till the chicken legs have coloured nicely.
- Pour in sufficient water to just cover everything then bring to the boil.
- Turn down to a simmer and leave to bubble gently stirring from time to time for 35-45 min till the chicken is tender.
- Lift the chicken legs out with a draining spoon and using a knife and fork remove most of the meat off the bone.
- Cut it into large pcs.
- Strain the liquid through a sieve or possibly colander into a clean saucepan.
- Put it back on the heat add in the chicken bones (to remove any remaining meat) broccoli and ginger.
- Bring to the boil then turn the heat down and let the soup simmer till cooked about 8 min or possibly so.
- Remove the bones.
- Add in the chicken coconut cream coriander leaves and lime juice.
- Stir as the soup comes back to the boiltaste and season generously with salt and black pepper.
- A rich chicken broth seasoned with coriander leaf (be generous) and coconut lowfat milk. Soothing and warming for a cool day it is meaty sufficient to be a light main course for an everyday supper. You can buy coconut cream in major stores and indian grocers.
