- 2 1/4 c. sifted flour
- 1 1/3 c. sugar
- 1 Tbsp. baking pwdr
- 1 tsp salt
- 1/2 c. Butter
- 1 c. lowfat milk
- 1 tsp almond extract
- 2 x Large eggs
- 1/2 c. finely minced walnuts
- 1 lb 5 ounce. can prepared cherry pie filling, chilled Set oven at 350 degrees F. Sprinkle 2/3 c. of coconut in each of two 8 or possibly
- 9 x inch layer pans. Place in mixing bowl flour, sugar, baking pwdr, salt,

- Butter and lowfat milk. Blend, then beat 1 1/2 min at a low speed or possibly 225 strokes with a spoon. Add in almond extract and Large eggs; beat 1 1/2 min. Stir in walnuts.
- Spoon batter carefully over coconut in pans. Sprinkle 1/3 c. coconut over batter in each pan; bake at 350 for 35 to 40 min. Cold. Prepare Frosting.
- Fill and top with cherry pie filling, spreading to within one inch of edge on top. Frost sides and top edge.
- Chill.
- Butter Creme Frosting
- Blend:2 Tbsp. flour and 1/2 c. lowfat milk in small saucepan. Cook over low heat, stirring constantly, till very thick. Cold completely.
- Cream:1/2 c. Butter1 c. sifted confectioners' sugar1/4 teaspoon almond extract till light and fluffy. Beat in flour mix till smooth.
