I am not playing tricks on your eyes-- this bubbly, rich cheese sauce is not loaded with as many fat grams as this dish could have. I can't give you exact calories and fat grams (partly because I'm too lazy to calculate it with a software program), but I can tell you that this dish is flavorful-- and it just might turn a cauliflower hater into a new believer. I didn't even plan to blog about this recipe, because I created it on a whim. I made this last week, after a hard day at the office. ,%20but%20I%20can%20tell%20you%20that%20this%20dish%20is%20flavorful--%20and%20it%20just%20might%20turn%20a%20cauliflower%20hater%20into%20a%20new%20believer.%20%20I%20didn't%20even%20plan%20to%20blog%20about%20this%20recipe,%20because%20I%20created%20it%20on%20a%20whim.%20%20I%20made%20this%20last%20week,%20after%20a%20hard%20day%20at%20the%20office.%20%20One%20of%20my%20favorite%20fast%20dinners%20is%20to%20sear%20a%20pork%20tenderloin,%20roast%20it%20in%20the%20oven%20at%20425F--%20and%20to%20make%20a%20fast%20pan%20sauce%20of%20white%20wine,%20chicken%20stock...and%20maybe%20even%20some%20homemade%20peach%20jam.%20%20As%20a%20side%20dish,%20I%20make%20roasted%20asparagus%20(with%20a%20little%20olive%20oil,%20salt%20&%20pepper),%20which%20is%20a%20favorite%20in%20our%20kitchen%20Roasted%20cauliflower%20is%20also%20a%20family%20favorite,%20so%20that's%20what%20I%20intended%20to%20make.%20%20%20Then,%20I%20remembered%20that%20I%20finally%20found%20a%20reduced-fat%20cheese%20that%20was%20highly%20recommended%20by%20Cook's%20Illustrated--%20and%20I%20trust%20them,%20wholeheartedly.%20%20I%20had%20never%20heard%20of%20Cabot%20cheese,%20but%20I%20finally%20found%20it%20at%20Whole%20Foods.%20%20I've%20been%20skeptical%20of%20most%20reduced-fat%20cheeses,%20mainly%20because%20they%20have%20a%20weird%20texture.%20%20This%20night,%20I%20decided%20to%20see%20if%20I%20could%20create%20a%20cheese%20sauce%20that%20didn't%20have%20whole%20milk%20or%20heavy%20cream%20and%20tons%20of%20butter...%3C/p%3E%3Cp%3ELactose%20free,%20gluten%20free...%20sounds%20good.%3C/p%3E%3Cp%3EI%20cut%20the%20florets%20into%20even%20pieces.Since%20I%20wanted%20to%20speed%20things%20up,%20I%20microwaved%20them%20for%20about%205%20minutes--%20just%20enough%20to%20partially%20cook%20them%20but%20not%20turn%20them%20to%20mush.%20%20You%20are%20not%20going%20to%20see%20my%20usual%20step-by-step%20photos%20on%20how%20I%20made%20the%20sauce,%20because%20I%20wasn't%20sure%20what%20my%20end%20result%20would%20be--%20I%20just%20started%20whisking%20and%20adding%20without%20a%20camera%20nearby.%20%20%20%20I%20decided%20that%20I%20would%20make%20a%20white%20sauce%20(equal%20parts%20butter%20and%20flour,%20and%20whole%20milk).%20I've%20taken%20some%20brief%20classes%20in%20nutrition%20(since%20my%20son%20is%20a%20diabetic,%20and%20it%20was%20part%20of%20my%20Esthetics%20training,%20years%20ago).%20I'm%20all%20for%20the%20Mediterranean%20Diet--%20in%20particular%20Omega-3%20fats,%20which%20is%20found%20in%20olive%20oil.%20%20--%20%20I%20started%20with%202%20Tablespoons%20of%20unsalted%20butter,%20and%20about%202%20Tablespoons%20of%20olive%20oil.%20%20Next,%20I%20thickened%20the%20fat%20with%20equal%20flour%20and%20let%20it%20cook%20for%20a%20minute%20or%20two.%20%20Instead%20of%20using%20whole%20milk,%20%20I%20splashed%20in%201%25%20milk%20(which%20is%20what%20I%20drink%20anyway),%20and%20used%20mostly%20low-sodium%20chicken%20to%20make%20the%20sauce%20silky%20smooth.%20%20For%20seasonings,%20I%20added%20one%20small%20minced%20garlic%20clove,%20kosher%20salt%20&%20fresh%20cracked%20pepper,%20and%20a%20small%20pinch%20of%20cayenne%20pepper.%20%20I%20gave%20it%20a%20taste--%20ah,%20a%20little%20Dijon%20mustard....there!%20%20I%20have%20fresh%20thyme%20in%20our%20herb%20garden,%20but%20I%20didn't%20want%20to%20leave%20my%20sauce.%20I%20grabbed%20a%20pinch%20of%20dried%20thyme,%20instead.%20%20Last,%20I%20added%20about%201/2%20cup%20of%20freshly%20grated%20Cabot%20cheese.%20%20The%20sauce%20was%20thick,%20perfect%20and%20tasted%20great!%20%20So,%20I%20grabbed%20my%20camera...%3C/p%3E%3Cp%3EI%20was%20starting%20to%20have%20high%20hopes%20that%20I%20pulled%20it%20off.%20%20I%20decided%20to%20moisten%20some%20Japanese%20panko%20crumbs%20(which%20I%20always%20have%20on%20hand,%20because%20I%20love%20the%20crunch%20of%20them%20far%20better%20than%20traditional%20bread%20crumbs),%20and%20slightly%20moistened%20them%20with%20a%20little%20olive%20oil.%20%20I%20topped%20the%20partially%20cooked%20cauliflower%20and%20placed%20the%20casserole%20into%20a%20350F%20oven,%20for%20about%2020%20minutes.%3C/p%3E%3Cp%3EMy%20taste%20buds%20are%20remembering%20this%20dish,%20at%20this%20very%20moment.%20Look%20at%20that%20bubbly%20sauce,%20would%20ya?!%3C/p%3E%3Cp%3ENOTE:%20The%20topping%20might%20have%20been%20even%20more%20golden,%20had%20I%20broiled%20it%20at%20the%20end%20for%20a%20minute%20or%20so.%20I%20also%20wish%20I%20had%20cut%20some%20fresh%20thyme%20as%20a%20pretty%20garnish,%20and%20to%20perfume%20the%20panko%20crumbs..next%20time...%3C/p%3E){kind=link}
