- 1/2 pound American cheese, grated or possibly shredded
- 2 T Parmesan cheese, grated
- 2 egg yolks
- 1 T butter
- 1 c. lowfat milk
- 2 T very dry white wine
- 1 teaspoon cornstarch

- Place butter in top of double boiler. In the meantime, beat together egg yolks and lowfat milk with fork, then add in to butter. Add in grated Parmesan and shredded American cheese to mix. Let water in pan come to boil. Stir cheese mix with wooden spoon constantly till cheese and butter heat. Mix wine and cornstarch before adding to cheese mix. Stir constantly till mix smooths and thickens. Remove from boiling water and serve.If necessary to reheat sauce, place over boiling water and stir constantly. Serves 4.
