- 1/4 c. Butter
- 1/2 c. Chopped onion
- 1/3 c. Grated carrots
- 1/4 x Flour
- 1/2 tsp Dry mustard
- 1/2 tsp Paprika
- 1/2 lb Grated cheddar cheese, (2 c.)
- 3 can (10 3/4 ounce.) chicken broth
- 1 1/4 c. Half and half
- 1 can (12 ounce.) ale or possibly beer

- Heat butter in large heavy saucepan. Add in onion and carrot, cover and cook over low heat about 5 min. Blend in four, mustard, and paprika. Stir in cheese and 1 can broth till cheese is melted. Add in remaining ingredients; simmer 30 min, stirring occasionally.
- Makes 7 c.. Garnish bowls of soup with popcorn, chopped chives, minced parsley, or possibly crumbled bacon.
