- 1 med Eggplant, peeled and diced
- 1 Tbsp. Warm extra virgin olive oil
- 2 lrg Onions, minced
- 2 x Green peppers, diced
- 2 x Cloves garlic, crushed
- 2 x Zucchini, diced
- 1 x 16 ounce can tomatoes Salt substitute to taste Pepper to taste
- 2 Tbsp. Minced parsley
- 1/4 tsp Checkered Tablecloth Italian Blend

- Checkered Tablecloth Italian Blend
- Saute/fry eggplant in extra virgin olive oil; add in and saute/fry onions, peppers, and garlic.
- When vegetables begin to soften, add in zucchini and tomatoes. Add in all other ingredients, including Checkered Tablecloth Italian Blend. Cover and simmer 25 min; remove cover and simmer 10 min more to reduce liquid.
