The best laid plans... yeah. About that. Once a year, my heart rate quickens at the thought of having an entire month off work. Don't hate me. It's without pay, and well earned at the end of a school year. For one whole month, I can turn off my alarm clock. I can catch up on the pile of ironing
I hate need to do. I can swim in our subdivision lap pool.
Oh! I can blog more than once a week. Yes, I was going to accomplish all these things. As the end-of-the-school year countdown began, I had fantasies of making the recipes I've pinned-- greeting my husband with full make-up, a smile and a romantically set table. Didn't happen. None of it.

,%20and%20I%20thought%20this%20would%20be%20a%20dessert%20he'd%20like.%20%20I%20searched%20around%20for%20recipes%20and%20I%20knew%20I%20wanted%20to%20make%20the%20pudding,%20from%20scratch.%3C/p%3E%3Cp%3EThe%20first%20thing%20I%20decided%20was%20to%20%22halve%22%20the%20recipe,%20since%20it%20was%20only%20the%20four%20of%20us.%20%20I%20thought%20it%20was%20a%20brilliant%20idea%20to%20make%20these%20in%20my%20beloved%20Ball%20Canning%20jars.%20%20%20I%20figured%20they'd%20transport%20easily,%20and%20would%20make%20a%20perfect%20serving%20size.%20NOTE%20TO%20SELF:%20I'm%20not%20the%20only%20person%20who%20had%20this%20idea...%20a%20google%20search%20came%20up%20with%20oodles%20of%20pudding%20in%20a%20jar...but%20many,%20with%20that%20fake%20cream%20stuff%20and%20boxed%20pudding.%3C/p%3E%3Cp%3EWhile%20the%20bananas%20were%20roasting,%20I%20made%20the%20pudding.%20Four%20egg%20yolks,%20sugar%20and%20cornstarch%20are%20whisked%20together.%3C/p%3E%3Cp%3EOn%20the%20stove,%20I%20heated%20half%20and%20half%20and%20salt%20until%20simmering--%20then%20whisked%20in%20a%20half-cup%20to%20the%20eggs,%20to%20temper%20them.%20%20Once%20I%20incorporated%20the%20egg%20mixture,%20the%20pudding%20thickened%20up%20super%20fast.%3C/p%3E%3Cp%3EOff%20heat,%20I%20added%20pure%20vanilla%20and%20unsalted%20butter%20to%20the%20pudding.%20%20The%20roasted%20bananas%20had%20cooled%20enough%20to%20peel.%3C/p%3E%3Cp%3EIn%20a%20food%20processor,%20I%20added%20the%20pudding,%20peeled%20and%20roasted%20banana%20and%20some%20lemon%20juice%20and%20pureed%20it%20until%20smooth.%20%20I%20took%20a%20taste,%20and%20was%20very%20happy%20with%20the%20flavor%20of%20the%20pudding.%20It%20had%20just%20the%20right%20balance%20of%20%22real%22%20banana.%20%20To%20avoid%20%22pudding%20skin%22%20I%20covered%20the%20pudding%20with%20plastic%20wrap%20and%20let%20it%20chill%20until%20slightly%20cooled--%20about%2045%20minutes.%3C/p%3E%3Cp%3EThe%20final%20step%20was%20to%20slice%20fresh%20bananas%20and%20gently%20coat%20it%20with%20more%20lemon%20juice.%20%20Ambitious%20that%20I%20can%20be,%20I%20had%20wanted%20to%20make%20homemade%20vanilla%20wafers.%20%20Please%20refer%20to%20my%20opening%20paragraph...%20time%20was%20running%20out.%20So%20was%20my%20energy.%20So,%20I%20used%20boxed%20vanilla%20wafers.%20%20I%20layered%20a%20few%20wafers%20on%20the%20bottom%20of%20each%20jar,%20then%20pudding...%3C/p%3E%3Cp%3E...then%20banana%20slices%20and%20in%20between%20additional%20layers,%20I%20added%20some%20crushed%20vanilla%20wafers,%20for%20texture.%20I%20ended%20up%20with%20six%20wide%20mouth%20jars%20of%20banana%20pudding,%20which%20went%20into%20the%20fridge%20to%20chill%20for%20a%20couple%20of%20hours.%20In%20the%20meantime,%20I%20pondered%20if%20I%20should%20make%20meringue%20or%20use%20whipped%20cream.%20%20Since%20I%20was%20going%20to%20transport%20the%20dessert,%20I%20nixed%20the%20idea%20of%20meringue.%20Next%20time,%20for%20sure!%3C/p%3E%3Cp%3EOh.%20I%20had%20a%20little%20bit%20more%20pudding%20left,%20so%20I%20filled%20a%2016%20ounce%20jar%20with%20pudding,%20and%20plenty%20of%20wafers..and,%20whipped%20cream.%20%20This%20would%20become%20the%20%22extra%22%20left%20in%20our%20own%20fridge.%3C/p%3E%3Cp%3EBefore%20packing%20up%20the%20desserts,%20in%20a%20cooler,%20I%20wanted%20to%20photograph%20one%20of%20the%20dessert%20jars--%20and%20to%20taste%20it!%3C/p%3E%3Cp%3EMy%20son%20was%20still%20home,%20getting%20ready%20for%20work.%20I%20know%20he's%20always%20willing%20to%20be%20my%20taste%20tester.%3C/p%3E%3Cp%3ETASTING%20NOTES:%20I%20can%20see%20why%20banana%20pudding%20is%20so%20beloved,%20in%20the%20South.%20%20The%20texture%20of%20the%20pudding%20was%20creamy%20and%20velvety.%20The%20flavor%20had%20just%20the%20right%20balance%20of%20banana,%20without%20that%20artificial%20flavor.%20Yes!%20I%20liked%20the%20way%20the%20wafers%20had%20softened.%20My%20first%20thought%20that%20this%20was%20reminiscent%20of%20banana%20cream%20pie.%20%20Like%20a%20good%20mom,%20I%20brought%20the%20remaining%20jar%20to%20my%20son,%20who%20tasted%20it.%20%20He's%20brutally%20honest,%20and%20said%20it%20was%20%22outstanding%22.%20%20He%20asked%20if%20there%20was%20more.%20%20Yes,%20one%20more%20jar.%20The%20rest%20left%20with%20us%20to%20our%20hosts.%20%20As%20for%20our%20Southern%20Gentlman--%20I%20heard%20him%20reminding%20his%20wife%20to%20get%20the%20recipe.%20He%20says%20it%20was%20%22like%20home%22.%20%20That's%20the%20best%20compliment%20I%20could%20ask%20for.%3C/p%3E%3Cp%3EThis%20is%20the%20photo%20from%20Cook's%20Country.%20I%20think%20this%20is%20also%20a%20stunning%20presentation,%20but%20is%20a%20lot%20of%20pudding!%20I'd%20make%20this%20for%20a%20dinner%20party%20of%208,%20more%20people!%3C/p%3E%3Cp%3EThe%20Grand%20Finale,%20of%20my%20summer%20break%20is%20that%20tomorrow,%20my%20husband%20and%20I%20are%20flying%20off%20to%20British%20Columbia.%20%20We'll%20be%20splitting%20on%20Vancouver%20Island,%20and%20in%20Vancouver.%20%20It's%20been%20decades%20since%20I've%
