  • 12 sm Bell peppers
  • 2 lb Imitation crabmeat, flaked
  • 4 x Limes
  • 2 x Avocados, peeled and diced
  • 6 x Green onions, finely sliced
  • 1 bn Cilantro, minced
  • 1 x Cucumber, diced (preferably hothouse or possibly English) Freshly grnd pepper Seafood-cocktail sauce mixed with a few drops Tabasco sauce

  1. Halve peppers vertically, remove seeds, and blanch in boiling water till crisp-tender (several min). Chill. Place crabmeat in large bowl and douse with juice of 1 lime. Add in avocado, onions, cilantro and cucumber.
  2. Stir gently; season with grnd pepper and juice of another lime. Fill pepper shells with seafood mix. Cut remaining limes into wedges and pass with cocktail sauce and pepper mill.
