%20%E9%95%BF%E5%B4%8E%E8%9B%8B%E7%B3%95%20that%20I%20made%20two%20days%20ago.%20But%20first%20of%20all%20I%20must%20thank%20Irene%20of%20MyMeLoves%20for%20sending%20me%20the%20wooden%20mould%20when%20she%20saw%20I%20left%20a%20comment%20on%20Sonia's%20blog%20post%20and%20she%20told%20me%20immediately%20she%20got%20an%20extra%20piece%20for%20me.%20Lucky%20me%20and%20really%20appreciate%20your%20kindness,%20Irene%20%E7%9C%9F%E7%9A%84%E5%A5%BD%E6%84%9F%E5%8A%A8!%20Without%20this%20mould%20I%20would've%20never%20thought%20of%20making%20this%20cake.%20There%20are%20also%20a%20few%20times%20I%20saw%20Jane%20posted%20this%20delicious%20cake%20on%20her%20blog%20and%20I%20told%20myself%20that%20I%20must%20make%20this%20cake%20as%20soon%20as%20I%20could%20get%20the%20mould.%20So%20here%20is%20my%20first%20Castella%20cake!%20Let%20me%20tell%20you,%20you'll%20love%20this%20cake%20at%20first%20bite.%20The%20cake%20is%20moist%20and%20soft%20with%20the%20combination%20scent%20of%20honey%20and%20mirin.%20(You%20can%20omit%20mirin%20if%20you%20don't%20have%20it).%20It%20is%20also%20a%20great%20gift%20for%20anyone,%20just%20wrap%20with%20a%20parchment%20paper%20(as%20shown%20here)%20or%20a%20nice%20decorative%20paper%20and%20tie%20a%20pretty%20little%20knot%20over%20it.%3C/p%3E%3Cp%3EAs%20I'm%20using%20the%20wooden%20mould%20for%20the%20first%20time,%20I%20soaked%20the%20mould%20in%20water%20overnight,%20dry%20and%20bake%20for%2030%20mins%20at%20160C.%20This%20step%20would%20eliminate%20odour%20from%20the%20wood.%20To%20use%20the%20wooden%20mould,%20put%20it%20on%20a%20baking%20sheet%20lined%20with%20aluminium%20foil%20as%20the%20mould%20has%20no%20bottom,%20then%20line%20the%20inside%20with%20another%20baking%20sheet.%20Don't%20worry%20if%20you%20don't%20have%20a%20wooden%20mould,%20you%20can%20always%20use%20a%20loaf%20pan%20to%20bake%20this%20cake%20like%20my%20friend%20Biren%20of%20RotinRice.%3C/p%3E%3Cp%3EActually%20I%20baked%20two%20Castella%20Cakes%20on%20the%20same%20day.%20You%20may%20be%20curious%20how%20come%20the%20cakes%20came%20in%20two%20colours.%20Because%20the%20cake%20on%20the%20first%20picture%20was%20added%20with%20a%20darker%20honey%20and%20this%20one%20here%20with%20a%20lighter%20one.%20I%20also%20wanted%20to%20get%20a%20smooth%20surface%20for%20the%20second%20cake%20as%20the%20first%20one%20has%20little%20wrinkled%20surface%20after%20the%20cake%20was%20inverted%20but%20I'd%20completely%20forgotten%20about%20it%20and%20overturned%20the%20cake%20on%20a%20wire%20rack%20so%20there%20are%20marks%20on%20the%20cake...aiyah!%3C/p%3E%3Cp%3ECastella%20Cake%20(%E3%82%AB%E3%82%B9%E3%83%86%E3%83%A9,%20Kasutera)%20%E9%95%BF%E5%B4%8E%E8%9B%8B%E7%B3%95%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20160C.%3C/p%3E%3Cp%3ESieve%20bread%20flour,%20plain%20flour%20and%20salt%20together%20twice.%3C/p%3E%3Cp%3EWhisk%20eggs%20and%20sugar%20at%20medium%20speed%20for%20about%208-10%20minutes%20until%20batter%20is%20thick%20and%20creamy%20white.%3C/p%3E%3Cp%3EWhile%20whisking%20the%20batter,%20at%20the%20same%20time%20add%20warm%20milk%20(microwave%2030%20seconds),%20honey%20and%20SP%20in%20a%20small%20bowl%20and%20stir%20mixtures%20till%20smooth%20with%20a%20hand%20whisk.%20(after%20mixing%20for%20a%20couple%20of%20minutes,%20%20I%20found%20the%20SP%20is%20not%20easily%20dissolved%20in%20the%20liquid,%20so%20I%20put%20the%20mixtures%20through%20a%20sieve%20to%20make%20sure%20the%20SP%20is%20thoroughly%20smooth)%3C/p%3E%3Cp%3EScrap%20bowl%20and%20switch%20machine%20to%20low%20speed,%20slowly%20add%20in%20the%20milk%20mixture,%20mix%20well.%3C/p%3E%3Cp%3EThen%20add%20in%20flour%20bit%20by%20bit%20(about%20one%20tablespoon%20at%20a%20time)%20until%20well%20combined.%3C/p%3E%3Cp%3ELastly%20add%20in%20melted%20butter%20and%20mirin%20in%20two%20batches%20and%20mix%20well.%3C/p%3E%3Cp%3EPour%20batter%20into%20prepared%20wooden%20mould%20and%20bake%20for%2050-60%20mins%20on%20middle%20rack%20of%20the%20oven%20or%20skewer%20inserted%20comes%20out%20clean.%20(I%20baked%20for%2050%20mins)%3C/p%3E%3Cp%3ETake%20the%20baked%20cake%20out%20from%20oven.%20Let%20it%20rest%20for%20a%20while%20and%20cover%20with%20a%20parchment%20paper%20on%20top%20then%20invert%20mould%20and%20remove%20the%20wooden%20mould.%3C/p%3E%3Cp%3ELet%20the%20cake%20cool%20down%20slightly%20and%20wrap%20it%20up%20with%20cling%20wrap%20and%20parchment%20paper.%20Store%20the%20warmed%20cake%20in%20the%20refrigerator%20overnight.%20This%20is%20to%20ensure%20the%20castella%20cake%20has%20a%20moist%20texture.%20If%20you%20let%20it%20cool%20to%20room%20temperature%20before%20wrapping,%20it%20will%20end%20up%20a%20bit%20dry.%3C/p%3E%3Cp%3ETrim%20the%20sides%20of%20the%20cake%20before%20serve.%3C/p%3E%3Cp%3EKitchen%20note%20from%20Jane:%20The%20batter%20should%20be%20thick%20enough%20to%20form%20soft%20peaks%20when%20you%20draw%20up%20your%20whisk.%20To%20test%20it,%20you%20can%20write%20a%20letter%20%22O%22%20on%20the%20surface%20of%20batter%20and%20it%20should%20
