  • 1 lrg Can plum tomatoes, crushed
  • 1 Tbsp. Parsely Healthy pinch of oregano Salt & pepper
  • 4 Tbsp. Extra virgin olive oil
  • 2 x Garlic cloves, minced
  • 2 lb Whole squid w/ tentacles
  • 1/2 c. Dry sherry

Инструкции

  1. Prepare squid for cooking:Separate tentacles from sac, squeeze out bony beak. Wash sac thoroughly, removing translucent/soft bone. Peel off any outer skin. Cut sac into rings.
  2. Tentacles may be left whole or possibly cut in half.
  3. Prepare the sauce:Add in tomatoes to saucepan with parsley, oregano, salt and pepper. Simmer for 30 min.
  4. In a frying pan, add in extra virgin olive oil and lightly brown garlic cloves. Add in cut up squid and saute/fry for about 10 min. Add in 1/2 c. dry sherry, stir; pour into tomato sauce and simmer gently for about 15 min.
  5. Serve over your favorite pasta.
