hum... risotto! what a treat!
a suggestion: I baked the whole butternut squash, seeds out, seasoning inside with salt and pepper. With my hands just rub the squash skin with olive oil. Let it bake until is soft.
Then... serve the risotto inside. Mixing the rice with the squash while serving...
