- 2 c. butternut squash puree
- 3/4 c. cold butter, diced, plus more for the pan
- 2-3 T. Turbinado sugar, for the pan
- 1 c. packed dark brown sugar
- 2 large eggs, at room temperature
- 2 T. pure maple syrup
- 1 t. vanilla extract
- 2 c. all-purpose flour
- 1 1/2 t. baking powder
- 1/2 t. ground cumin
- 3/4 t. ground ginger
- 1/4 t. ground nutmeg
- 1/2 t. kosher salt
- 1 c. high quality white chocolate chips, divided

%20We%20always%20meet%20the%20in-laws%20there%20and%20have%20a%20great%20time%20seeing%20horses%20that%20will%20probably%20make%20an%20appearance%20at%20the%20Kentucky%20Derby%20and%20beyond.%20%20%20(Of%20course%20last%20year,%20we%20were%20lucky%20enough%20to%20see%20the%20Triple%20Crown%20winner,%20American%20Pharoah.)%3C/p%3E%3Cp%3EThe%20Hubs%E2%80%99%20parents%20first%20introduced%20us%20to%20horse%20racing%20about%2018%20or%20so%20years%20ago.%20%20%20They%20were%20traveling%20to%20Hot%20Springs%20and%20Oaklawn%20Park%20long%20before%20then.%20%20%20They%20love%20the%20horses%20and%20the%20FiL%20loves%20to%20try%20to%20beat%20the%20system.%3C/p%3E%3Cp%3ELast%20year%20for%20their%2050th%20wedding%20anniversary,%20The%20Hubs%20and%20all%20his%20siblings%20pitched%20in%20to%20send%20them%20to%20the%20Kentucky%20Derby,%20a%20lifelong%20dream%20of%20theirs.%20%20%20These%20siblings%20did%20it%20up%20right%20and%20even%20purchased%20tickets%20to%20the%20Taste%20of%20the%20Derby.%20%20I%20think%20the%20MiL%20might%20have%20had%20more%20fun%20there%20than%20at%20the%20actually%20races.%20%20%20She%20made%20a%20point%20of%20remembering%20all%20the%20food%20to%20report%20back%20to%20me.%20%20%20%20I%20was%20envious%20with%20chefs%20like%20Debbie%20Gold,%20Tim%20Love,%20and%20Kevin%20Gillepsie%20(among%20others)%20representing.%20%20%20My%20MiL%20was%20most%20taken%20with%20Chef%20Johnny%20Iuzzini,%20who%20had%20just%20recently%20authored%20Sugar%20Rush.%20%20%20She%20wanted%20to%20get%20me%20an%20autographed%20copy,%20but%20Iuzzini%20had%20just%20sold%20out%20when%20she%20visited%20his%20table.%20%20%20Because%20she%20is%20a%20sweetheart,%20she%20ordered%20one%20for%20me%20as%20soon%20as%20she%20got%20home.%3C/p%3E%3Cp%3EShe%20did%20get%20me%20his%20autograph%20in%20the%20Taste%20of%20Derby%20program.%3C/p%3E%3Cp%3EJohnny%20Iuzzini%E2%80%99s%20flourished%20autograph.%3C/p%3E%3Cp%3EAs%20she%20regaled%20me%20with%20descriptions%20of%20the%20food%20at%20last%20year%E2%80%99s%20Taste%20of%20the%20Derby,%20she%20kept%20going%20on%20about%20the%20most%20delicious%20chocolate%20shot%20glasses%20filled%20with%20Kentucky%20bourbon.%20%20%20I%20don%E2%80%99t%20know%20if%20these%20little%20chocolaty%20shots%20of%20goodness%20were%20at%20Iuzzini%E2%80%99s%20table%20or%20not,%20but%20I%20found%20her%20descriptions%20hilarious.%20%20My%20MiL%20is%20not%20a%20drinker.%3C/p%3E%3Cp%3ESo%20in%20honor%20of%20the%20upcoming%20Run%20for%20the%20Roses,%20I%20want%20to%20thank%20my%20MiL%20for%20the%20kind%20gift%20of%20Sugar%20Rush%20by%20making%20one%20of%20Iuzzini%E2%80%99s%20recipes.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20F.%20%20%20Butter%20an%208%20x%2011-inch%20baking%20pan%20and%20coat%20it%20generously%20with%20the%20turbinado%20sugar,%20tapping%20out%20the%20excess.%3C/p%3E%3Cp%3EA%20great%20technique%20for%20coating%20pans%20for%20bar%20cookies!%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20a%20stand%20mixer%20with%20paddle%20attachment,beat%203/4%20c.%20butter%20with%20brown%20sugar.%20Beat%20the%20butter%20and%20sugar%20on%20medium%20speed%20for%20about%205%20minutes,%20until%20lightened%20and%20no%20clumps%20of%20butter%20remain.%20%20%20Add%20the%20eggs,%20one%20at%20a%20time,%20mixing%20well%20and%20scraping%20down%20the%20bowl%20with%20a%20rubber%20spatula%20between%20additions.%20%20Add%20the%20syrup%20and%20vanilla%20and%20mix%20will.%3C/p%3E%3Cp%3EIn%20a%20separate%20bowl,%20whisk%20together%20the%20flour,%20baking%20powder,%20cumin,%20ginger,%20nutmeg%20and%20salt%20%20together.%20%20With%20the%20mixer%20on%20low%20speed,%20gradually%20add%20the%20dry%20ingredients,%20a%20little%20at%20time,%20mixing%20until%20just%20combined.%20%20Remove%20the%20bowl%20from%20the%20mixer%20and%20fold%20in%202/3%20c.%20of%20the%20white%20chocolate%20chips.%3C/p%3E%3Cp%3EEvenly%20spread%20the%20batter%20into%20the%20prepared%20pan%20and%20sprinkle%20the%20remaining%20white%20chocolate%20chips%20evenly%20over%20the%20top.%20%20Bake%20on%20the%20center%20rack%20until%20a%20cake%20tester%20inserted%20in%20the%20center%20comes%20out%20clean,%20about%2045%20minutes.%3C/p%3E%3Cp%3ECool%20completely%20in%20the%20pan%20on%20a%20rack%20before%20cutting%20into%2012%20equal-sized%20pieces.%3C/p%3E%3Cp%3EI%20made%20a%20few%20adaptations%20to%20the%20original%20recipe.%20%20First,%20I%20decreased%20the%20amount%20of%20cumin%20by%201/4%20t.%20%20(The%20original%20recipe%20called%20for%203/4%20t.%20cumin.%20%20I%20felt%20like%20that%20was%20a%20bit%20too%20much.)%20%20%20The%20cumin%20does%20add%20an%20interesting%20note%20and%20makes%20these%20bars%20quite%20unique.%3C/p%3E%3Cp%3EThe%20original%20recipe%20also%20called%20for%20mace.%20%20Not%20having%20any,%20I%20subbed%20in%20nutmeg.%20%20It%20worked%20well.%3C/p%3E%3Cp%3EFinally,%20Demerara%20%20sugar%20was%20called%20for%20to%20coat%20the%20pan.%20%20Again,%20not%20having%20any,%20I%20subbed%20in%20Turbinado%20sugar.%20%20%20I%20really%20liked%20this%20technique%20and%20will%20be%20coating%20my%20other%20bar-cookie%20pans%20with%20sugar.%3C/p%3E%3Cp%3ELoved%20the%20texture%20the%20Turbinado%20sugar%20gave%20to%20these%20brownies.%3C/p%3E%3Cp%3ERest%20assured%20that%20Sugar%20Rush%20is%20not%20just%20a%20cookie%20and%20brownie%20book.%20%20Iuzzini%E2%80%99s%20book%20is%20full%20of%20techniques%20and%20every%20pastry%20recipe%20you%20would%20ever%20need%20including%20instructions%20for%20custards,%20meringues,%20caramel,%20cakes,%20muffins,%20tarts,%20pies,%20and%20yeast%20doughs.%3C/p%3E%3Cp%3EI%20actually%20took%20these%20brownies%20along%20with%20his%20Spiced%20Apple%20and%20Pistachio%20Streusel%20Muffins%20for%20this%20year%E2%80%99s%20trip%20to%20the%20Arkansas%20Derby.%3C/p%3E%3Cp%3ESpiced%20Apple%20and%20Pistachio%20Streusel%20Muffins%3C/p%3E%3Cp%3EThese%20and%20those%20super%20moist%20squash%20bars%20traveled%20well.%20%20We%20had%20the%20bars%20for%20desserts%20and%20the%20mufifns%20for%20breakfasts.%20%20(I%20think%20the%20FiL%20may%20have%20snuck%20a%20few%20more.)%3C/p%3E%3Cp%3EDid%20we%20see%20the%20Kentucky%20Derby%20winner%20and%20potential%20Triple%20Crown%20winner%20this%20year?%3C/p%3E%3Cp%3ECupid,%20pre-race%20at%20Arkansas%20Derby,%20April%2016,%202016%3C/p%3E%3Cp%3ECupid%20was%20the%20favorite%20and%20really%20disappointed.%20%20%20The%20winner%20was%20Creator.%20%20%20Other%20horses%20we%20saw%20that%20might%20have%20a%20shot%20are%20Suddenbreakingnews%20and%20Whitmore.%20%20%20You%20know,%20it%20is%20really%20a%20crap%20shoot.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
