- 2 c. sugar
- 1 c. shortening
- 1 teaspoon salt
- 2 teaspoon cinnamon
- 2 c. unsweetened applesauce
- 2 teaspoon soda dissolved in 1/8 c. warm water
- 3 1/2 c. flour
- 1 teaspoon vanilla
- 1 c. white raisins
- 2 c. pecans

- In a large mixing bowl, cream together sugar, shortening, salt and cinnamon. In another bowl, put together applesauce and soda. Beat till foamy and add in to mixing bowl. Stir till well blended, then mix in flour. Mix till it forms a smooth dough. Add in vanilla, raisins and pecans. Pour into a well-greased and lightly floured bundt pan and bake at least 1 hour at 350 degrees.Cool before removing from pan. Wrap in foil and try not to cut for 1 week. The older it gets the better it tastes and is great to make ahead.
