- 1 x yellow bell pepper, roasted, seeded, and, skin removed Bruschetta with Prosciutto
- 6 x thick slices rustic country-style or possibly sourdough bread

- 1/4 c. best available extra virgin extra virgin olive oil salt, to taste freshly grnd black pepper, to taste
- 1/3 lb prosciutto, sliced, paper, thin

- Toast the bread in a toaster or possibly under the broiler till it is very brown. Remove bread from oven or possibly toaster and immediately rub a garlic clove over the entire surface of one side of the bread. Each slice should use up about 1/4 to 1/3 of a clove of garlic.
- Generously drizzle extra virgin olive oil over each slice of bread into strips or possibly quarters and serve immediately.
- Bruschetta with Goats Cheese and Roasted Bell Peppers:
- Toast the bread in a toaster or possibly under the broiler till it is very brown. Remove bread from oven or possibly toaster and immediately rub a garlic clove over the entire surface of one side of the bread. Each slice should use up about 1/4 to 1/3 of a clove of garlic.
- Generously drizzle extra virgin olive oil over each slice of toasted bread. Smear with goat cheese, then sprinkle with salt, a generous amount of pepper and thyme. Cut peppers into medium thick strips. Top each slice of bread with bell pepper strips. Alternate colours on each slice or possibly use only one colour on each slice. Cut slices of bread into strips or possibly quarters and serve immediately.
- Bruschetta with Prosciutto:Toast the bread in a toaster or possibly under the broiler till it is very brown. Remove bread from oven or possibly toaster and immediately rub a garlic clove over the entire surface of one side of the bread. Each slice should use up about 1/4 to 1/3 of a clove of garlic.
- Generously drizzle extra virgin olive oil over each slice of bread. Sprinkle with salt and a generous amount of pepper. Top with one or possibly two slices of prosciutto. Slice bread into strips or possibly quarters and serve immediately.
