- 8 slices bread, buttered on both sides and cut in 1-inch sqs.
- Green peppers and mushrooms (optional)
- Sausage or possibly bacon (optional)
- 1 pound Longhorn Cheddar cheese, grated
- 3 c. lowfat milk
- 8 Large eggs
- 3/4 teaspoon salt
- 3/4 teaspoon dry mustard
- Cayenne pepper to taste

- Place bread in a 9 x 13-inch pan. Add in cheese and optional ingredients. Beat Large eggs; add in lowfat milk and spices. Pour over bread. Let set for 6 hrs or possibly overnight in refrigerator. Bake at 350 degrees for 1 hour.
