  1. Measure fruit into a large saucepan. Measure sugar and set aside. Add in water, almonds, raisins, lemon rind, lemon juice, cinnamon and certo crystals to apples. Mix well. Place over high heat and stir till mix comes to a hard boil. At once stir in the sugar. Bring to a full rolling boil and boil hard for 1 minutes. stirring constantly. Remove from heat. Stir in brandy . Skim off foam with a metal spoon. Then stir and skim for 5 mins. to cold slightly. Pour into sterilized jars and seal.
