- 1 C chopped celery, 1/2” pieces
- 1 C chopped bell pepper, 1/2” pieces
- 1 1/2 Tbsp dried oregano
- 1 tsp cumin
- 2 large bay leaves
- 3 cloves garlic, peeled & finely chopped
- 1 Lb ground protein (beef, chicken, pork, or even turkey - use what ya like best)
- 14 Oz canned diced tomatoes
- 1 C dark beer
- 2 Tbsp hot sauce
- 7 Oz can kidney beans, drained & rinsed
- 7 Oz can black beans, drained & rinsed
- 7 Oz can garbanzo beans, drained & rinsed
- 7 Oz can whole kernel corn, drained
- Coarse sea salt & fresh cracked black pepper

%20and%20set%20up%20to%20do%20nothing%20but%20be%20there%20together.%20It%20was%20glorious.%20Most%20days%20we%E2%80%99d%20try%20our%20best%20to%20stand%20up%20on%20sticks%20while%20holding%20a%20rope%20behind%20a%20speeding%20motorboat,%20and%20at%20night,%20we%E2%80%99d%20roast%20marshmallows%20and%20toast%20hot%20dogs%20until%20our%20eyelids%20got%20too%20heavy%20to%20keep%20them%20open%20a%20moment%20longer.%3C/p%3E%3Cp%3EThe%20campground%20had%20a%20guest-house%20with%20an%20ice%20cream%20shop%20where%20they%20showed%20movies%20each%20night,%20a%20dock%20where%20you%20could%20rent%20paddle%20boats%20for%20$5%20or%20so%20an%20hour,%20and%20a%20big%20tent%20where%20they%20hosted%20weekend%20dances%20every%20Saturday%20night.%20That%E2%80%99s%20where%2012%20year%20old%20me%20would%20lurk%20around%20the%20edge%20of%20the%20dance%20floor,%20darting%20between%20the%20shadows%20from%20the%20over-head%20lighting,%20wishing%20on%20all%20the%20stars%20in%20the%20sky%20above%20that%20the%20cute%20boy%20in%20the%20camper%20down%20the%20road%20would%20ask%20me%20to%20dance.%3C/p%3E%3Cp%3ESpoiler%20alert:%20he%20didn%E2%80%99t.%3C/p%3E%3Cp%3EI%20mean,%20we%20were%2012.%3C/p%3E%3Cp%3EAnd%20if%20I%E2%80%99m%20being%20honest%20%E2%80%93%20lurking%20as%20a%20dating%20strategy%20has%20about%20as%20much%20appeal%20as%20munching%20on%20screws.%3C/p%3E%3Cp%3EOver%20the%20years,%20I%20curated%20a%20collection%20of%20friends%20who%20helped%20me%20grow%20from%20the%20child%20I%20was%20toward%20the%20woman%20I%20was%20about%20to%20become.%20They%20helped%20me%20realize%20what%20I%20liked,%20and%20what%20I%20didn%E2%80%99t.%20What%20was%20funny,%20and%20what%20wasn%E2%80%99t.%20And%20how%20badly%20I%20wanted%20to%20belong%20somewhere.%20Through%20broken%20legs,%20adventures%20trespassing%20on%20private%20land%20(and%20getting%20shot%20at)%20to%20get%20to%20our%20swimming%20dock,%20and%20watching%20popular%20films%20on%20Summer%20nights%20while%20crunching%20on%20potato%20chips%20and%20coke-bottle%20candy,%20they%20shaped%20me.%3C/p%3E%3Cp%3EOf%20course,%20September%20inevitably%20rolled%20around,%20and%20we%E2%80%99d%20go%20our%20separate%20ways%20until%20April.%20But%20come%20May?%3C/p%3E%3Cp%3EOh,%20sweet%20mama.%3C/p%3E%3Cp%3EAs%20a%20grown%20up,%20I%E2%80%99ve%20fallen%20even%20more%20in%20love%20with%20camping.%20And%20now,%20I%20do%20it%20properly%20%E2%80%93%20on%20the%20ground,%20tucked%20in%20a%20bag,%20inside%20a%20tent.%20I%20can%20carry%20all%20of%20my%20gear%20on%20my%20back.%20Showering%20is%20not%20an%20option.%20And%20the%20only%20thing%20you%20have%20to%20do,%20is%20be%20there.%3C/p%3E%3Cp%3ECamping%20is%20my%20happy%20place.%3C/p%3E%3Cp%3EUnfortunately,%20the%20campgrounds%20are%20currently%20shut%20and%20that%20means%20no%20unfurled%20sleeping%20bags%20or%20roaring%20fire%20pits%20with%20blackened%20marshmallows%20and%20toasted%20hot%20dogs.%20That%20being%20said,%20we%20do%20have%20surplus%20of%20beer,%20plenty%20of%20stars%20in%20the%20sky,%20and%20a%20dish%20I%20ALWAYS%20make%20for%20the%20first%20night%20of%20camping%20%E2%80%93%20boozy%20beer%20chili%20con%20carne.%3C/p%3E%3Cp%3ELoaded%20with%20fresh%20veggies,%20spiced%20protein,%20and%20spiked%20with%20dark%20beer,%20this%20recipe%20is%20one%20of%20the%20best%20chili%20recipes%20you%20will%20ever%20make.%20You%20probably%20have%20all%20the%20ingredients%20in%20your%20fridge%20already,%20too.%20And%20it%20comes%20together%20in%20an%20hour.%20Though%20I%20won%E2%80%99t%20lie%20%E2%80%93%20dishing%20up%20seconds%20the%20next%20day%20(or%203)%20makes%20it%20even%20better.%20Garnish%20to%20your%20preference,%20though%20I%20like%20a%20healthy%20dose%20of%20sour%20cream,%20diced%20red%20onion,%20sliced%20avocado,%20cheddar%20cheese,%20green%20onion,%20hot%20sauce,%20some%20tortilla%20chips,%20and%20more%20beer.%20But%20that%E2%80%99s%20%20me.%3C/p%3E%3Cp%3EMake%20my%20boozy%20beer%20chile%20con%20carne%20and%20chow%20down%20on%20camp-friendly-food,%20kids.%20Because%20hell,%20if%20we%20can%E2%80%99t%20go%20camping,%20we%20can%20still%20eat%20like%20we%20are.%20Because%20it%E2%80%99s%20almost%20May%20long,%20baby.%20And%20that%E2%80%99s%20campin%E2%80%99%20season.%3C/p%3E%3Cp%3EFun%20Fact:%20I%20LOVE%20hearing%20from%20you!%20Seriously%20%E2%80%93%20it%20kills%20me.%20In%20a%20good%20way.%20So%20if%20you%20make%20this%20%20boozy%20beer%20chili%20con%20carne%20recipe,%20please%20be%20sure%20to%20rate%20the%20recipe%20here,%20leave%20a%20comment%20below,%20or%20tag%20me%20on%20Instagram%20so%20I%20can%20see!%20I%20always%20respond%20personally%20to%20each%20and%20every%20one%20of%20you%20because%20this%20is%20our%20delicious%20community%20and%20I%E2%80%99m%20damn%20stoked%20to%20be%20a%20part%20of%20it.%3C/p%3E%3Cp%3EBoozy%20Beer%20Chili%20Con%20Carne%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EDrizzle%20olive%20oil%20into%20a%20large%20stockpot%20over%20medium%20heat.%20Add%20the%20onion,%20carrots,%20celery,%20bell%20pepper,%20oregano,%20cumin,%20bay%20leaves,%20a
