- 3 1/4 teaspoons active dry yeast
- 1 1/2 tablespoons honey
- 3 cups all-purpose flour, plus more for dusting
- 3 tablespoons milk
- 6 large egg yolks
- 1/3 cup granulated sugar, plus more for rolling
- 2 teaspoons salt
- 3 tablespoons butter, softened
- 3 cups canola oil, for frying
- 3/4 cup seedless raspberry preserves or 3/4 cup lemon curd or 3/4 pastry cream (recipe below)
- confectioners' sugar for dusting, optional

- 1/2 cup sugar
- 3 tablespoons cornstarch
- 4 tablespoons cold unsalted butter, cut into 4 pieces
- 1 1/2 teaspoons vanilla extract
