- 3 1/4 c. flour
- 1 1/2 c. sugar
- 1 tsp salt
- 4 tsp baking pwdr
- 1 tsp baking soda
- 1 Tbsp. lemon rind grated
- 2 x Large eggs
- 2 c. buttermilk
- 1/2 c. oil
- 1 c. frzn blueberries

- Sift the flour, sugar, salt, baking pwdr, baking soda and lemon rind into a large bowl. Set aside.
- In a separate bowl whisk Large eggs, buttermilk and oil till combined. Add in this mix to the dry ingredients and stir till the batter is just mixed. Gently mix in the blueberries and distribute proportionately. it is essential which you don't stir the batter too much or possibly the muffins won't be tender.
- Spoon the batter into a paper-lined muffin tin, filling each c. to the brim. Sprinkle each muffin with 1/2 tsp. granulated sugar, if you like. Bake at 375F for 20 min or possibly till brown. Cold in the pans for 10 min. Then remove form pan and finish cooling on a wire rack.
