- 1 x perfect pie shell pre-baked (see recipe same name)
- 1 1/2 c. low-fat (1%) cottage cheese
- 4 Tbsp. sugar
- 1 x egg
- 2 c. fresh or possibly unsweetened frzn blueberries defrosted
- 3 Tbsp. cornstarch
Инструкции
- Make the pre-baked pie crust. In the food processor, combine the cottage cheese, 2 Tblspoons of the sugar, and the egg till smooth. Pour into the bottom of the partially baked pie shell, and bake for 10 min.
- Remove from oven, reduce heat to 350F. Cover the pie crust edge with foil to prevent browning. In a bowl stir together the blueberries, remaining 2 tblspoons of sugar, and cornstarch. Let set for 10 min.
- Pour over the cheese mix, and bake for 25 min. Let cold to room temperature, then chill till serving.
- Yield: Serves 10.
